Nineteen ninety-one. Lou between Viktoras Kulvinskas, who wrote the book that built the raw food movement, and Dick Gregory.

For years after that, every bag that reached a Miami shelf carried his face on the label.

Why trays fail

Day three, and the tray smells wrong


You lift the lid and there it is. White fuzz across the seed. You tell yourself it is root hair. By day four the smell settles it for you.

Most growers answer mold by adding steps. A longer rinse, a peroxide dip, one more sanitising spray. Lou went the other way. He took the soak out.

  • Seed that turns slimy in the jar before it ever touches soil
  • Patchy trays, so half a harvest has to pay for a whole bag of seed
  • A grow room with a sour smell you cannot trace

Here is the part almost nobody says out loud. Mold is a water and air problem, not a dirt problem. Hours of standing water leave the seed coat warm, wet and still, and every spore in the room now has a bed.

Fixing it means changing what happens in the first twelve hours. Lou wrote down how.

Who Lou is

Lou started with three trays on a screened porch in Coconut Grove in the early eighties. He founded Green Garden Organics in 1992 and built it into a supplier for health food stores across Miami-Dade, Broward and Palm Beach, then for Whole Foods, The Fresh Market and Milam’s.

He is a licensed nutritionist in the State of Florida, licence number NC489. Sunflower, pea and buckwheat greens sat on his hand-painted price board years before the trade settled on the word microgreens.

Ten thousand people have his soil recipe. Not one of them grows like he does.
